This colorful fruit salad is sweet, juicy and full of fresh flavors. The honey lime dressing brings everything together with a perfect citrusy finish. It’s great as a light side dish or snack.

Ingredients

For the Fruit Salad

  • 1 Pound strawberries fresh, hulled and quartered
  • 1 pineapple fresh, peeled and cut into cubes
  • 3 mandarin oranges fresh, peeled and separated into segments
  • 2 mangoes fresh, peeled and cut into cubes
  • 1 Pound kiwis peeled and cut into cubes
  • 1 Pound red grapes cut in half
  • 18 Ounces blueberries fresh

For the Dressing

  • 2 limes juiced, or 1 Cup Greek yogurt for a creamy dressing
  • ¼ cup honey
  • mint leaves for garnish (optional)

Instructions

  • Wash, peel and chop the fruit. Put it in a large mixing bowl.
  • Whisk the lime juice and honey (or, for a creamy dressing, the Greek yogurt and honey).
  • Pour the fruit salad dressing over the fruit and toss gently to mix.
  • Refrigerate until you’re ready to serve it, then toss again to redistribute the dressing and garnish with fresh mint if liked.

Notes

Use ripe fruit: Fully ripe fruit ensures the best flavor and texture.
Chill before serving: This brings out the freshness and helps the dressing soak in.
Toss gently: Avoid crushing the fruit by mixing slowly with a soft spatula.
Serve same day: The salad is best when served fresh, after a short chill.
