Ingredients

  • Pounds red potatoes unpeeled and cut into quarters
  • 1 Cup onion sliced, sweet or red onion
  • ¼ Cup salted butter melted
  • 1 Teaspoon garlic powder
  • 1 Teaspoon dried parsley
  • 1 Teaspoon salt
  • ¼ Teaspoon black pepper
  • 4 hot dogs or cooked sausages
  • ½ Cup Colby Jack cheese or similar, shredded
  • 1 Cup BBQ sauce sweet or spicy

Instructions

  • Preheat the BBQ to medium heat, 350 to 375 degrees F.
  • Cut 4 pieces of aluminum foil, 12 inches wide. Set aside.
  • In a large Ziploc bag, add the potatoes and onion slices.
  • Pour the melted butter over the potatoes.
  • Sprinkle the garlic powder, dried parsley, salt and pepper. Close the bag and shake it to coat all the potato pieces.
  • Place ¼ of the potato mixture on a pre-cut aluminum foil. Add one hot dog sausage.
  • Pour ¼ cup of BBQ sauce.
  • Sprinkle some of the shredded Colby Jack.
  • Close the foil pack and repeat for the 3 other ones.
  • Place the foil packets on the preheated grill.
  • Cook for 15 to 18 minutes or until the potatoes are nice and soft, then serve.

Notes

Cooking time: The cooking time mainly depends on the size of the potatoes, as the other ingredients are either cooked already or don't take long to cook. Cut the potatoes smaller for a shorter cooking time.
Pre-seasoning: Feel free to prepare and season the potatoes a day or so ahead and just keep them in the refrigerator until required.
Not all foil is created equal: If you want your potato packets to be delicious, don't use cheap foil which is going to tear! Instead, use heavy duty aluminum foil that will safely enclose all your ingredients and make this recipe a success.
