Instant Pot Chicken Taco Lettuce Wraps

Instant Pot keto chicken taco lettuce wraps make such a delicious dinner. The tasty chicken filling is enclosed in crisp romaine and garnished with all your favorite taco toppings.

Ingredients

For the Chicken:

  • 16 Leaves romaine large

Optional Toppings:

  • cheddar cheese shredded
  • red onion finely diced
  • tomatoes diced
  • sour cream
  • guacamole
  • jalapeno sliced
  • cilantro chopped

Instructions

  • Place the chicken breasts in your Instant Pot. Add the chicken broth, taco seasoning, salsa, and lime juice. Stir to combine.
  • Lock on the lid and turn the valve to sealing. Press the “manual” or “pressure cook” button to high and cook for 12 to 15 minutes depending on the thickness of the chicken.
  • Do a quick release of the pressure and shred the cooked chicken with 2 forks. Stir the shredded chicken into the sauce.
  • To assemble the tacos, put the lettuce leaves on a large platter or plate. Top with the shredded salsa chicken, cheese, guacamole, red onion, and sour cream. jalapeno slices, and cilantro (or whichever toppings you want).
  • Serve immediately.

Notes

Let the Instant Pot pressurize: Allow 10 to 15 minutes for the pressure to increase before the cooking process starts.
Meal prep chicken tacos: Keep the cooked chicken mixture in an airtight container in the fridge, the washed, dried romaine lettuce leaves in a gallon Ziploc bag in the fridge, and the toppings either pre-cut or you can prep them just before serving. That way, you can have lunch or dinner ready in 5 minutes!
Make a taco station: It can be fun to serve all the toppings separately so everyone can add their own. This is also fun if you have guests over.
Keto-friendly: Use keto-friendly taco seasoning and salsa if desired.
