Jalapeño Popper Casserole

This casserole brings the fun of jalapeño poppers into a cozy baked dish with chicken, bacon and cream cheese. It’s layered together in one pan and baked until bubbly. Easy, comforting and loaded up with flavor, it takes under an hour to make.

Ingredients

  • 3 Cups chicken cooked and shredded
  • 8 Slices bacon cooked and crumbled or chopped
  • 8 jalapeños deseeded and diced
  • 16 Ounces cream cheese at room temperature
  • ½ Cup sour cream
  • 1 Teaspoon garlic powder
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 2 Cups cheddar cheese or Mexican cheese blend, shredded
  • 4 green onions sliced
  • cooking spray as needed

Instructions

  • Set your oven to 350°F and lightly grease a 9 x 13-inch baking dish with cooking spray.
  • In a large mixing bowl, combine the shredded chicken, half of the crumbled bacon, half of the diced jalapeños, cream cheese, sour cream, garlic powder, salt, and black pepper.
  • Mix well until evenly combined.
  • Spread the mixture evenly into the prepared baking dish.
  • Sprinkle the shredded cheddar or Mexican cheese blend over the top.
  • Scatter the remaining diced jalapeños and crumbled bacon over the cheese.
  • Bake in the preheated oven and bake for 25 to 30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with sliced green onions.
  • Let it cool for a few minutes, then serve warm, with tortilla chips, crackers or a side of rice, if liked.

Notes

Use room temperature cream cheese: It blends smoothly and helps the casserole set well.
Don’t overmix the filling: Stir just until combined for a better texture.
Cook bacon extra crispy: It holds its shape and adds textural contrast after baking. Save the bacon grease for another use.
Let it rest after baking: A minute or 2 makes it easier to serve without losing cheese.
