Ingredients

Instructions

Make the Cookie Dough

  • Add the butter and sugar to a large mixing bowl.
  • Use an electric hand mixer to cream the ingredients together for about 2 minutes, or until the sugar is dissolved.
  • Whisk in the egg and vanilla extract. Make sure the egg is thoroughly incorporated with the creamed sugar.
  • Gently whisk in the flour until it is fully incorporated with the wet ingredients.
  • Scrape along the bottom of your mixing bowl to ensure no flour remains unincorporated.

Shape the Cookies

  • Divide the cookie dough into 12 evenly sized balls.
  • Roll the cookie dough in your hands to create a sphere and then use your thumb or the back of a tablespoon to create an indent in the center of each cookie.

Chill Them

  • Chill your cookie dough in the fridge for 20 minutes.
  • Preheat your oven to 350°F while the cookies are chilling.

Add the Jam Filling

  • When chilled, fill each cookie indent with a spoonful of raspberry jam.

Bake the Jam Thumbprint Cookies

  • Space them out on a cookie sheet and bake for 11 minutes.
  • Let the cookies cool on the pan for a few minutes before moving them to a wire cooling rack to cool completely.

Notes

Chill dough: It helps prevent spreading in the oven and keeps the shape neat.
Uniform indents: The indent in your cookies does not need to be very deep. It is just going to help keep the jam from running over the sides of your cookies. Using the back of a tablespoon is a great way to get more uniform looking cookies since all of your indents will be the same size, but you can use your thumb for a more rustic finish.
Avoid overfilling: A small spoonful of jam is enough to keep the filling contained.
Cool completely: Moving them too soon can make the centers sink.
