  • Heat the water, sugar and lavender in a saucepan over a medium heat, stirring often, until the sugar is dissolved, about 10 minutes.
  • Strain the liquid into a jar, along with a few drops of food coloring if using. You will be left with all the lavender in the sieve which you can discard.

Notes

Use food grade dried lavender: This is important, as non food grade lavender might have been treated with pesticides or other chemicals.
Keep an eye on it: Watch the saucepan and stir the mixture often. You don't need the temperature any higher than a gentle simmer.
Label the container: If this is the only syrup you're making and you're adding purple food dye, you'll know what it is, otherwise it's best to label your jar or bottle so you know.
