Cook the Fries:

  • Prepare the frozen French fries according to the package instructions — bake, air fry, or deep fry until crispy.
  • Once cooked, sprinkle the fries with the Cajun seasoning and toss to coat evenly. Set aside.

Make the Cheese Sauce:

  • Make the sauce while the fries are cooking. In a medium saucepan, melt the butter over a medium heat.
  • Whisk in the flour and cook for 1 to 2 minutes until the flour mixture (roux) turns golden and bubbly.
  • Slowly whisk in the milk, stirring constantly to avoid lumps.
  • Cook until the mixture thickens, 3 to 5 minutes.
  • Stir in the shredded cheddar and pepper jack cheeses, stirring until melted and smooth.
  • For extra heat, sprinkle in a bit of chili powder, if liked.
  • Remove from the heat.

Assemble the Dish:

  • Transfer the seasoned fries onto a warmed serving platter.
  • Drizzle the warm cheese sauce generously over them.
  • Drizzle the ranch over the cheese sauce or serve on the side for dipping.
  • Serve immediately with your preferred toppings.

Notes

Season immediately: Sprinkle the Cajun seasoning onto the fries as soon as they come out of the oven, fryer, or air fryer. The heat helps the seasoning stick.
Use freshly shredded cheese: Use this for the creamiest cheese sauce because the starches found in pre-shredded cheese can make the sauce grainy.
Don’t skip the ranch dressing: This cool dressing balances the spicy, cheesy fries perfectly. Serve it on the side or drizzle a little on top.
Serve them right away: Voodoo fries are best enjoyed fresh and hot, so the fries stay crisp and the cheese sauce stays smooth.
