Marry Me Chicken Pasta

Ingredients

For the Chicken Pasta:

  • 10 Ounces ziti pasta
  • 1 Pound boneless skinless chicken cut into 1-inch pieces
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper freshly cracked
  • 1 Tablespoon olive oil

For the Sauce:

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season chicken with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6 to 8 minutes, or until cooked through. Transfer chicken to a plate and set aside.
  • Melt the butter in the same skillet, add garlic and sauté for 30 seconds, or until fragrant. Add flour and stir to make a paste, about 1 minute.
  • Whisk in the chicken broth, heavy cream, and parmesan cheese.
  • Stir in the drained sun-dried tomatoes, Italian seasoning, salt and black pepper.
  • Simmer the sauce for 5 to 7 minutes or until thickened.
  • Return the chicken to the skillet along with the cooked pasta. Stir to coat the chicken and pasta in the sauce.
  • Add the spinach and let cook until wilted down.
  • Garnish with chopped basil leaves and additional parmesan cheese if desired.

Notes

Add wine: Add ¼ cup of dry white wine to the sauce for an added depth of flavor. If you add wine, reduce the chicken broth to 1¾ cups in your pasta dish.
Cook pasta al dente: Cook the pasta until it is al dente. It will continue to cook slightly when mixed with the sauce, so this prevents it from becoming mushy.
Season generously: Season the chicken breasts well with salt and pepper. Taste the sauce before serving and add a little more if needed.
Don’t overcrowd the pan: Give each piece space in the skillet when cooking the chicken. This prevents it from steaming instead of browning.
Drain sun-dried tomatoes: Drain the sun-dried tomatoes well to avoid adding extra oil to the sauce.
