Marry Me Surf and Turf

Ingredients

  • 2 steaks eg New York, ribeye, flank steak
  • ½ Pound shrimp large, peeled and tail-on
  • 1 Teaspoon salt
  • ¾ Teaspoon black pepper
  • 4 Tablespoons butter
  • 3 Cloves garlic minced
  • 2 Cups chicken broth
  • 1 Cup heavy cream
  • ½ Cup sun-dried tomatoes drained and chopped
  • ½ Teaspoon dried oregano
  • ½ Cup parmesan cheese grated
  • 2 Cups baby spinach chopped
  • juice from ½ lemon
  • 1 Tablespoon corn starch optional for thickening
  • 2 Tablespoons water optional for thickening

For Garnish:

  • fresh basil thinly chopped
  • lemon wedges optional

Instructions

  • Season the steak and shrimp with ½ teaspoon salt and ½ teaspoon pepper. Set the shrimp aside.
  • Melt the butter in a large skillet over a medium-high heat.
  • Once hot, add the steak and sear for 4 minutes, then flip and cook for another 3 to 4 minutes.
  • Remove the steaks from the pan and cover them loosely with foil. Let them stand for 10 minutes.
  • Add the garlic to the same pan and sauté for 30 to 60 seconds or until fragrant.
  • Add the chicken broth and stir to combine.
  • Whisk in the heavy cream, sun-dried tomatoes, oregano, ½ teaspoon salt, and ¼ teaspoon pepper.
  • Bring the sauce to a simmer.
  • Add the shrimp and cook in the sauce for 2 minutes.
  • In a small bowl, whisk together the cornstarch and water until smooth.
  • Add the cornstarch slurry to the pan, stir and simmer for 2 minutes or until the sauce has thickened.
  • Add the parmesan, spinach and lemon juice.
  • Stir to combine and let it cook until spinach is wilted down.
  • Return the steak to the skillet and warm it through.
  • Serve immediately, garnished with basil, lemon wedges and/or additional parmesan cheese if liked.

Notes

Preheat the skillet: Let the skillet get hot before adding the steak, creating a nice crust on the steak.
Shrimp cook quickly: They can become rubbery if overdone - a couple of minutes is all they'll need.
Cornstarch slurry: The cornstarch slurry is optional, but it does give the sauce a nice creamy and smooth texture.
