Optional heart toppers:
- ⅓ Cup chocolate melting or candy melts in preferred color
- sprinkles as needed
For the Strawberries:
Use a small melon baller or spoon to scoop the center out of each sliced strawberry. If the strawberries appear to be wet, dab them dry gently using a paper towel and set aside.
In a bowl, whip the mascarpone cheese together with ½ cup of powdered sugar and 1 teaspoon of vanilla extract.
Give the mixture a taste, if you prefer a sweeter filling add an additional ¼ cup of powdered sugar and whip again.
Fill a large piping bag, fitted with a large open star piping tip, with the mascarpone filling.
Fill each strawberry with the mascarpone.
Store in the fridge until ready to serve. When ready to serve, top with chocolate hearts and sprinkles.
Optional Chocolate Heart Toppers:
Melt the chocolate or candy coating in a small microwave safe dish.
Fill a piping bag with the melted chocolate. When the chocolate has cooled enough so that it is safe to handle, snip just the very tip off of the piping bag.
On a piece of parchment paper, draw hearts using the piping bag then either fill them in solid or in a “scribbled” pattern.
Sprinkle with sprinkles.
Let cool and harden completely before using.
