Why You’ll Love These
Easy: This recipe is incredibly easy to make. Forget expensive Valentine’s sweet treats from the grocery store and make these cheesecake stuffed strawberries instead.
Tasty: You can’t go stuffing juicy fresh strawberries with a creamy mixture that tastes like vanilla no bake cheesecake filling. It’s like a cheesecake without the graham cracker crumbs.
Versatile: Stuffed strawberries can be prepared ahead, to free up your time later. Serve them for dessert, as a sweet snack or paired with a sweet drink.
Mascarpone Stuffed Strawberries Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Strawberries: Thawed strawberries won’t work here. You need the firmness of fresh ones to hold the filling.
Mascarpone cheese: Mascarpone cheese is a soft Italian double or triple cream cheese. This tangy soft cheese contrasts beautifully with the berries. If you prefer, you can use softened cream cheese instead, as the cream cheese mixture will have a similar flavor and texture.
Powdered sugar: To sweeten the mascarpone or cream cheese filling. Don’t use regular sugar because it would be grainy. Powdered sugar is sometimes labeled confectioner’s sugar – this is the same thing.
Vanilla extract: Adds a lovely flavor to the filling. Feel free to use another flavor extract if you prefer.
Melting chocolates or candies: Although optional, these do look pretty on the finished stuffed strawberries. Sprinkles also look great and will stick to the melted chocolate if used.
How to Make Deviled Strawberries
For more detailed instructions with weights and measurements, jump to the printable recipe card.
Prepare the strawberries: Scoop out the middle of each strawberry with a melon baller or spoon. Pat them dry on a paper towel if needed.
Make the cheesecake filling: Whip the mascarpone with powdered sugar and vanilla extract, adding more powdered sugar if you want it sweeter.
Fill the hulled strawberries: Fill a large piping bag with the cheese filling and fill the strawberries.
The finishing touches: If you want to decorate them, melt chocolate or candies and then pipe heart shapes and add sprinkles on top. Keep the cheesecake mix stuffed strawberries and the candy hearts chilled until serving.
Substitutions and Variations
Cream cheese also works: Cream cheese works in place of the mascarpone, so feel free to make a cream cheese mixture if you like.
Cut the carbs: Swap the powdered sugar for a keto-friendly alternative, such as a powdered sugar alternative or a few drops of liquid stevia sweetener.
Swap the vanilla: Valentine strawberries can be flavored with vanilla extract or any other kind you want.
Serving Suggestions
You can thread these on to long bamboo skewers as a garnish for cocktails or serve them just as they are. If you’re making them as part of a Valentine’s meal, here are some pairing ideas:
Main dish and sides: Pair stuffed strawberries with any of these Valentine breakfast ideas or for lunch or dinner, how about a special lobster dinner?
Desserts: Strawberry desserts like strawberry shortcake and bundt cakes can be decorated with mascarpone cheese strawberries.
Drinks: They would be delicious served with Valentine’s Day cocktails.
How to Store Mascarpone Filled Strawberries
Store: These are best served the day you make them but will keep for a day or so. They might weep a little if you don’t eat them for more than a day.
Freeze: These don’t freeze well, as they will thaw out mushy.
Top Tips
No piping bag? No problem: If you don’t have a piping bag, you can either use a Ziploc bag with the corner snipped off instead, or else simply use a small spoon to fill the berries.
Make the chocolate decorations last: It’s best to prepare the sprinkle-topped chocolate hearts just before serving (if using) so they don’t melt or run.
Customize as you like: You can have fun trying different flavors of extract (almond extract is really good too) and take your pick from different melting candies and types of sprinkles.
Filled Strawberries FAQs
If you don’t want to make chocolate hearts or melted candy hearts, you can sprinkle mini chocolate chips over the finished mascarpone devilled strawberries instead. Crushed graham crackers also work well, as a nod to cheesecake.
A large star tip works best for piping the cheesecake filling into the cored strawberries.
Yes, you can make it up to a day ahead. Keep it covered and refrigerated so it stays fresh.
