  • Add chicken, olive oil, Cajun seasoning, salt, and pepper to a large mixing bowl. Toss until coated.
  • Preheat a large grill pan over a medium-high heat.
  • Add the chicken and cook for 5 to 7 minutes per side, or until the internal temperature reaches 165°F.
  • Remove the chicken to a plate to rest for 10 minutes before slicing.
  • In 4 mason jars, evenly layer the Caesar dressing, sliced chicken, romaine, croutons, and shaved parmesan. You could also pour the dressing into individual dressing containers.
  • Store in the refrigerator until ready to serve.

Notes

Prevent wilting: Allow the chicken to cool before adding it to the mason jars, to avoid wilting the lettuce.
Order of stacking: Keep the dressing on the bottom and lettuce on top to maintain crisp lettuce.
