Meal Prep Firecracker Beef

Make weeknight dinners a breeze with this flavorful meal prep firecracker beef meal. It's quick, easy and tasty, with juicy beef, veggies and a delicious sauce.

Ingredients

For the Sauce:

For the Firecracker Beef Bowls:

  • 2 Tablespoons olive oil
  • 1 ½ Pounds ground beef
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper freshly ground
  • 1 yellow onion small, finely diced
  • 4 Cloves garlic minced
  • 4 Cups broccoli fresh, cut into florets
  • 5 Cups rice cooked

Optional Garnish:

  • 3 green onions thinly sliced

Instructions

Make the Sauce:

  • Add sriracha, sesame seed oil, soy sauce, rice vinegar, and honey to a small mixing bowl.
  • Whisk until combined.

Cook the Beef:

  • Heat 1 tablespoon olive oil in a large skillet over a medium-high heat.
  • Add beef, ¼ teaspoon salt and ¼ teaspoon black pepper.
  • Cook for 4 to 5 minutes, breaking it apart with a wooden spoon or spatula as it cooks.
  • Drain the excess grease.
  • Add onions and garlic to the pan and cook for 2 minutes or until garlic is fragrant.

Add the Sauce:

  • Pour in the firecracker sauce and stir to combine.
  • Cook for 3 to 5 minutes or until the sauce reduces.
  • Remove the pan from the heat and set aside.

Cook the Broccoli:

  • In a separate small skillet, heat the remaining tablespoon of olive oil.
  • Add the broccoli, ¼ teaspoon salt and ¼ teaspoon black pepper.
  • Sauté, stirring occasionally, for 3 to 5 minutes, or until the broccoli is tender.
  • Remove from the pan and set aside.

Assemble the Firecracker Beef Bowls:

  • Evenly divide the cooked rice, firecracker beef and broccoli into 5 meal prep containers.
  • Garnish with green onions, if desired.
  • Serve immediately or store the covered meal prep containers in the refrigerator for up to 4 days.

Notes

Broccoli doneness: I prefer my broccoli quite crisp but if you like softer broccoli, cover the pan with a lid while cooking for extra steam.
Break up the beef: Break up any chunks with a wooden spoon so it cooks evenly. The beef needs to be completely browned.
Drain off the excess grease: Unless you're using extra-lean ground beef, you'll want to drain off the excess oil after browning the meat.
Cool before storing: Let the firecracker beef bowls cool completely before covering and storing, otherwise the condensation inside the containers will make them watery.
