No Bake Bunny Print Cookies

The Easter bunny seems to have left his paw prints on these cookies! Everyone will love these cute bunny print cookies. They are sweet and delicious!

  • Place ½ cup coconut and desired food coloring in a food processor and alternate using the pulse and grind settings until the coconut is finely chopped and has reached desired color.
  • Repeat to make 3 different colors and set aside in small bowls.
  • Divide the frosting evenly among 12 cookies.
  • Dip each frosted cookie into the coconut batter and top with coordinating sprinkles to cover the white areas.
  • Place a candy wafer in the middle of the cookie and 3 chocolate chips for toes.

Notes

Prep the coconut ahead: Save time by making the colored coconut in advance. Keep it in airtight containers (one container per color) until making the recipe.
Get the kids involved: The kids can help frost the cookies and press them into the coconut as well as adding the candy toes!
Keep the frosting thick: It's easier to add the chocolate chips and candy wafers if there is a thick layer of frosting to press them into.
Make extra: These are so delicious the first batch might not last as long as you hoped, so ensure you are making enough!
