Orange Glazed Sweet Potatoes

  • Preheat the oven to 350°F.
  • Peel and slice the sweet potatoes about ¼-inch thick.
  • Spray an oven-safe dish (cast iron or similar) with cooking spray.
  • Gather the potatoes into stacks and layer them around the pan, to form 2 large rings. Fill in the middle with the extra potatoes.
  • Combine the butter, brown sugar, orange juice, maple syrup, orange zest, salt, cinnamon, nutmeg, ginger, and thyme leaves in a saucepan.
  • Cook for 4 to 5 minutes or until the sauce begins to bubble. Pour the sauce over the potatoes.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil and continue baking for another 15 minutes.
  • If the tops of the potatoes are not browned enough, keep baking for another 10 to 15 minutes.
  • Remove the sweet potatoes from the oven and sprinkle over some more thyme and flaky sea salt if liked. Serve immediately.

Notes

Careful not to overcook the sauce: You can cook it for 2 to 3 minutes but do not overcook it, or it can become thick like caramel and won’t spoon easily.
Even slicing: Use a mandolin slicer for quicker, more even slices.
Baste the potatoes: Baste the sweet potatoes a couple of times during the last 15 minutes of the baking time. Use a spoon and scoop some of the sauce from the pan over the potatoes.
Get some good color: During the last 10 minutes of baking, you can place them under the broiler (500°F) to give a little more color to the potatoes.
Make it ahead and save time: Prepare and bake the sweet potatoes, then refrigerate them for up to 2 days. Reheat in the oven, uncovered, at 350°F until warmed through.
