Pineapple Ginger Mojito Mocktail

This mocktail is a fizzy, fruity blend of pineapple, lime, ginger and mint. It’s easy to make and perfect for warm weather sipping. The ginger syrup adds just the right punch.

Instructions

  • Add the water to a small saucepan. Add sugar and sliced ginger. 
  • Heat over low flame.  
  • When the sugar has dissolved, remove the pan from the heat and chill. Once chilled, strain and discard the ginger. 
  • In a serving pitcher, add lime wedges, ice, mint leaves and ¼ cup of the ginger syrup 
  • Add pineapple juice and soda, then serve immediately.

Notes

Chill everything: Cold ingredients help the drink stay crisp and refreshing.
Muddle gently: Don’t crush the mint too much or it will turn bitter.
Use fresh lime: Bottled juice won’t have the same bright flavor.
Taste the syrup: Adjust sugar or ginger to your liking before using.
Serve quickly: This mocktail is best right after adding the club soda.
