Pork Chops Italiano

Ingredients

  • 4 pork chops bone-in or boneless, about 1 inch thick
  • 1 Teaspoon salt
  • ½ Teaspoon black pepper
  • 2 Tablespoons olive oil
  • 1 onion medium, finely chopped
  • 3 Cloves garlic minced
  • 1 Can diced tomatoes 14 ½-Ounce, with juice
  • ½ Cup tomato sauce
  • ¼ Cup dry white wine or chicken broth
  • 1 Teaspoon Italian seasoning
  • 1 Teaspoon dried basil or 1 tablespoon fresh chopped
  • 1 Teaspoon dried oregano or 1 tablespoon fresh chopped
  • 1 Teaspoon fresh rosemary chopped, or ½ Teaspoon dried
  • 1 Teaspoon fresh thyme leaves or ½ Teaspoon dried
  • ½ Teaspoon red pepper flakes optional
  • ½ Cup Parmesan cheese grated

Instructions

  • Pat pork chops dry and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear pork chops for 3 or 4 minutes per side until golden brown.
  • Remove and set aside.
  • In the same skillet, sauté onion until softened, about 4 minutes.
  • Add garlic and cook 1 minute.
  • Stir in diced tomatoes, tomato sauce, white wine or broth, basil, oregano, rosemary, thyme, and red pepper flakes if using.
  • Bring to a simmer.
  • Nestle pork chops into the sauce, spooning sauce over the top.
  • Cover and reduce heat to medium-low.
  • Simmer for 20 to 25 minutes, until pork chops are cooked through (145°F internal temperature).
  • Sprinkle with Parmesan cheese, cover again, and let rest for 2 minutes to melt.
  • Garnish with thyme and serve hot with your preferred sides.

Notes

Don’t skip the sear: Browning adds flavor and locks in juices.
Thin the sauce: If needed, thin the sauce with a little broth or water.
Control heat: Simmer on low so the pork stays tender.
Balance acidity: A pinch of sugar softens sharp tomato flavor.
Use fresh herbs: They brighten the dish more than dried.
