These pumpkin pie popsicles with Oreos are everything you love about fall pies but frozen and easy to grab. The creamy spiced base and Oreo crust are pure fall magic.
In a small saucepan mix together the pumpkin puree, cream, sugar, spices, salt, vanilla, and maple syrup until combined.
Heat mixture on stove until it is hot, not boiling or simmering, just hot.
Very slowly add in the guar gum while whisking the mixture. This is very important as it will prevent clumping. Continue mixing until combined and the mixture begins to thicken a little bit.
Remove the mixture from the heat.
Use a spoon or ladle to pour the mixture into your popsicle moulds leaving just a little space for the Oreo crust.
In a small bowl or in the bag you crushed your Oreos in, mix together the melted butter and the Oreos.
Spoon a small amount of the Oreo crust on top of the popsicles and gently pat down.
Place the completed popsicles in the freezer for at least 8 hours
Pop the popsicles out of the molds.
Notes
Whisk guar gum slowly: This prevents clumping and ensures a smooth texture. Don’t overheat: Keep the base hot, not boiling, to preserve the creaminess. Fill molds carefully: Leave just enough room for the crust to sit on top.
