Rainbow Sherbet Mimosa

This rainbow sherbet mimosa is fruity, fizzy, and fun—perfect for brunch, baby showers, or anytime you want a colorful cocktail!

Ingredients

  • 2 Scoops rainbow sherbet
  • 4 Ounces champagne or cava, prosecco or sparkling white wine
  • 1 Slice lemon
  • 1 Slice orange
  • 1 Slice Lime

Instructions

  • Add 2 scoops of sherbet to a champagne flute. 
  • Pour champagne over the sherbet slowly. 
  • Garnish with a slice each of lemon, orange and lime and serve immediately.

Notes

Colored ice cubes: Make colorful ice cubes by freezing fruit juice. Add those in too for extra flair.
Pour slowly: Add the champagne gently - you don't want it to bubble over!
Make a batch: Serving a crowd? Make a punchbowl of this cocktail so everyone can help themselves.
Freshly made is best: Don't make these until you're ready to serve them, so they stay fresh. They only take a couple of minutes to whip up.
