Raspberry Truffles Recipe

This easy raspberry truffles recipe is pure indulgence. It's the perfect treat for special occasions like Valentine's Day and Christmas.

  • In a microwave-safe bowl add the white chocolate chips and heavy cream. Heat up for 15-second increments. Mix in between each heating.
  • Add the raspberry powder to the melted chocolate. Mix until combined.
  • Place the bowl in the fridge for 10 to 15 minutes or until the filling is stiff. You do not want it to get hard, but stiff enough that you can roll it into balls.
  • Use a small cookie scoop to scoop out the portions. With clean hands roll the filling until you have perfectly round balls.
  • Place the truffles on a parchment paper-lined baking sheet.
  • In a medium-sized bowl add the dark chocolate chips. Microwave for 15-second increments until melted. Mix in between.
  • Place the truffle one at a time into the melted chocolate. With a fork roll the truffle in the chocolate until fully coated. Allow as much of the chocolate to drip off. With the truffle on the fork scrape the bottom of the fork on the side of the bowl to remove any excess chocolate.
  • Place the truffles back onto the parchment paper.
  • Place the coated truffles in the fridge for 10 minutes or until the chocolate is set.
  • Remove the truffles from the fridge.
  • Place the remainder of the chocolate into a Ziplock back or piping bag.
  • Drizzle the chocolate on top.
  • Sprinkle the raspberry powder onto the drizzled chocolate.
  • Place the truffles in the fridge for up to 10 minutes.

Notes

Don't use fresh berries: Maybe they're fine in some candy recipes but not this one. Raspberries contain too much moisture in their fresh state to use here.
Using freeze dried berries? 0.88 ounces is the right amount of freeze-dried raspberries to crush and use in this truffles recipe.
Serve chilled: They're best served from the refrigerator so they're cool and crisp and not melting.
