Ritz Cracker Chicken Casserole

Ingredients

  • 6 Cups chicken cooked and shredded, about 2 small rotisserie chickens without skin and bones
  • 8 to 10 Slices bacon cooked and chopped
  • ¾ Cup green onions sliced, plus more for garnish
  • 2 Cans cream of chicken soup 10 ½-Ounce cans
  • 8 Ounces sour cream
  • 1 Teaspoon Italian seasoning
  • 2 Sleeves Ritz crackers crushed
  • 1 Stick unsalted butter ½ Cup, melted
  • nonstick cooking spray as needed

Instructions

  • Preheat oven to 350°F and grease a 9 x 13-inch baking dish with cooking spray.
  • Mix the chicken, bacon, soup, sour cream, bacon, green onions and Italian seasoning together in a bowl.
  • Transfer the chicken mixture into the greased baking dish.
  • Stir the crushed crackers with the melted butter in another bowl and then sprinkle this over the chicken mixture in the baking dish.
  • Bake for 30 minutes or until the topping is golden brown and the mixture is bubbling.
  • Let it rest for 10 minutes (so it holds together better) and then serve hot, garnished with sliced green onions.

Notes

Crush smart: You can crush the crackers in their sleeve. Leave some larger crushed Ritz crackers bits for extra crunch.
Season to taste: Taste the filling and add more herbs or pepper if you like.
Even layer: Spread the chicken mixture flat so the topping browns evenly.
No soggy top: Add the crumb topping just before baking to keep it crisp.
Rotisserie win: Debone and shred while warm for the easiest pull.
