Instructions

Brown the Beef

  • Cook the ground beef in a skillet until browned, then drain any excess grease.
  • Add the onion and garlic to the skillet and cook until softened.
  • Transfer the beef mixture to the slow cooker and add the potatoes, carrots, corn, beef broth, Worcestershire sauce, Italian seasoning, salt and pepper.

Slow Cook the Soup

  • Cover and cook on low until the potatoes are tender and the flavors have developed.
  • Whisk the flour into the heavy cream until smooth, then stir it into the slow cooker during the last 30 minutes of cooking.
  • Stir in the cheddar cheese until melted and creamy.

Garnish and Serve

  • Let the soup cool for 5 to 10 minutes before serving.
  • Ladle into bowls and top with fresh parsley and any burger toppings you want.

Notes

Shred your own cheese: Pre-shredded cheese often melts less smoothly.
Keep the texture good: Cut potatoes into even pieces so they cook at the same pace.
Prevent clumps: Add cheese off the hottest heat and stir gently to keep it silky.
Control thickness: Stir in a splash of broth if it thickens too much after sitting. And let it rest for a few minutes before serving so it thickens up slightly more.
