Slow Cooker Chicken Faijtas

These fajitas rely on slow cooking to build flavor while keeping prep short. The chicken cooks until tender, while the vegetables are added later for contrast. It’s a dependable setup for a hands off meal with bold Tex-Mex flavors.

Ingredients

  • 2 ¼ Pounds boneless skinless chicken breasts
  • 1 ½ Packages fajita seasoning mix 1 Ounce total
  • 1 red onion large, halved and thickly sliced
  • 1 lime juiced
  • 1 Cup salsa mild, medium or hot
  • 3 bell peppers mix of colors, large, any colors, deseeded and thickly sliced
  • fresh cilantro for garnish

Instructions

  • Add the chicken to your slow cooker.
  • Add the salsa and fajita seasoning.
  • Cover and cook on high for 3 to 4 hours or high for 4 to 6 hours, until the chicken is tender and cooked through.
  • Add the onions and peppers for the last hour of cooking time.
  • Squeeze in the fresh lime juice.
  • Cover and cook until everything is tender.
  • Transfer the chicken onto a chopping board and either shred with a pair of forks or slice into thin strips.
  • Put it back in the Crockpot and stir to mix everything together.
  • Serve with flour tortillas, your preferred toppings and sides, and garnish with chopped cilantro.

Notes

Vegetable timing: Add peppers and onion near the end so they don’t become mushy.
Thicker texture: Remove the lid for a short stretch near the end if you want less liquid.
Final tasting: Adjust seasoning after cooking since spices can mellow over time.
