Slow Cooker Kielbasa, Cabbage and Potatoes

This slow cooker kielbasa, cabbage and potatoes recipe makes comfort food easy. Everything simmers together until tender and flavorful. It's a great set-it-and-forget-it dinner for busy days.

Ingredients

  • 2 Pounds sausage kielbasa
  • 2 Pounds fingerling potatoes
  • 1 yellow onion
  • ½ cabbage 
  • 3 Cloves garlic minced
  • 1 Tablespoon sun dried tomato paste
  • 1 Can fire-roasted tomatoes 14 ½-Ounce
  • 2 Cups chicken stock
  • ¼ Cup salted butter cold, chopped
  • 1 Teaspoon sea salt  flakes
  • ½ Teaspoon black pepper
  • 1 Teaspoon Cajun seasoning 

Instructions

  • Prepare ingredients. Chop kielbasa into ¼-inch pieces, halve the fingerling potatoes, slice onion about ¼-inch thick, and cut cabbage into 2-inch wedges. 
  • Add kielbasa, potatoes and onions to the slow cooker and lightly stir with a wooden spoon to mix.
  • Add all remaining ingredients except the cabbage and butter and stir again.
  • Top with the cabbage and dots of butter.
  • Cover and cook on low for 7 hours, or high for 3 hours.

Notes

Layer well: Keep the cabbage on top so it doesn’t overcook.
Use a wooden spoon: It’s gentle on your slow cooker and helps stir ingredients without breaking them.
Cut evenly: Keep pieces uniform for even cooking.
