Smoked Sausage and Potato Skillet

Ingredients

  • 4 to 6 Tablespoons olive oil
  • Pounds baby potatoes small, quartered
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 1 onion diced
  • 1 red bell pepper sliced
  • ½ Teaspoon garlic minced
  • 1 Package smoked sausage
  • 2 Teaspoons Italian seasoning
  • ¼ Cup chicken broth
  • 2 Tablespoons parmesan grated
  • 1 Teaspoon parsley freshly minced

Instructions

  • Heat the olive oil in a large sauté pan or skillet.
  • Add the potatoes and season with salt and pepper. Cook over medium heat for 5 minutes before stirring. Continue cooking for 5 minutes, then stir again.
  • Add the onions and continue cooking for another 5 minutes. Add a little more oil if necessary.
  • Add the bell pepper and garlic and cook for 1 minute.
  • Add the sausage and season with Italian seasoning. Cook for 2 to 3 minutes.
  • Pour in the chicken broth and cook over medium low for 5 minutes.
  • Remove from the heat and serve garnished with parmesan and parsley.

Notes

Crispy potatoes: Don't stir the potatoes much as they cook and give them about 20 minutes over a medium heat. This should result in them crisping up nicely.
Add more oil if needed: You can add a splash of oil when you add the onions, bell pepper and/or sausage if it seems to have been absorbed.
The right amount of salt: I usually add less salt and then more (if needed) at the end. If you're not using low-sodium chicken broth, use less salt in the recipe.
