Spicy Dill Pickles

  • Mix the vinegar, honey, pepper flakes, peppercorns, and salt in a pot and bring to a boil over medium heat.
  • Reduce to simmer and cook for 3 minutes.
  • Let cool to room temperature for 20 to 30 minutes.
  • In a large mixing bowl, toss the sliced cucumbers and onions together. Pour the cooled liquid over. Add the dill, cover and refrigerate for 2 hours.
  • Serve with a relish tray or on sandwiches.

Notes

Use super fresh ingredients: Use firm, fresh cucumbers and crisp, vibrant dill for the best flavor and texture. Overripe or soft cucumbers won’t hold up well in the brine.
Cool the brine properly: Allow it to cool completely before pouring it over the cucumbers and onions. This prevents the heat from cooking the vegetables, preserving their crunch.
Keep an eye on salt: Adjust the amount of salt to taste, especially if you’re using a different type than kosher salt, as salt levels can vary between types.
Customize your heat: Adjust the amount of red pepper flakes based on your heat preference. Start with a smaller amount and taste before adding more.
