Spicy Watermelon Jalapeño Salad

- 1 watermelon small, cut into wedges
- 3 Tablespoons lime juice
- 2 Tablespoons olive oil
- 2 Teaspoons honey
- ½ Teaspoon kosher salt plus more to serve
- ¼ Cup feta cheese crumbled
- 3 Tablespoons fresh cilantro chopped
- 3 Tablespoons fresh basil chopped
- 1 jalapeño thinly sliced
Cut watermelon into wedges and assemble the wedges on a large platter.
Whisk together lime juice, olive oil, honey, and salt in a small mixing bowl.
Spoon dressing over the top of the watermelon and top with feta, cilantro, basil, jalapeno slices, and Tajin. Add a pinch of salt if desired.
Serving sizes: The size of the watermelon you buy and how you cut it will determine the serving size. Cubes will serve more than wedges. If you need more than 5 servings, you could easily double this recipe.
In a hurry? Most grocery stores will sell pre-cut watermelon slices you can buy if you're pressed for time and don't want to cut up your own.
Serve right away: This is best served immediately after you pour the dressing on top. If you want to meal prep this recipe, you can slice the watermelon and make the dressing. Store them separately in the fridge until you’re ready to serve.
