Starbucks Copycat Iced Gingerbread Latte

This Starbucks copycat iced gingerbread latte combines espresso and cold milk with a homemade brown sugar gingerbread syrup and plenty of warming spices.

  • Mix brown sugar, water, ginger, cinnamon, cloves, nutmeg, vanilla, and salt in a medium saucepan. Bring to a boil.
  • Reduce heat to low and simmer for 15 minutes, stirring occasionally.
  • Pour into a jar and let cool.
  • Fill 2 glasses with ice. Pour 1 shot of espresso and ¾ cup milk over each glass. Stir in 2 to 3 tablespoons of gingerbread syrup to each latte. Stir until fully combined.
  • Serve garnished with a dusting of nutmeg if desired.

Notes

Make manual espresso: If you don’t have an espresso machine, you can use a French press.
Shake the syrup each time you use it: The spices may sink to the bottom of the jar.
Change the strength: 1 or 2 espresso shots are common for an iced latte, but use whatever amount you desire.
Top with whipped cream: For the ultimate indulgence.
Use super fresh spices: This makes a major difference to the result.
Stir the latte: It helps to stir the iced latte with a spoon or straw to distribute the syrup evenly.
Froth the milk: For a barista-style touch, froth your milk before adding it to the latte, hot or cold!
