  • Dice strawberries and pat them completely dry. Set aside for now.
  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar, strawberry jam and lemon juice and continue to beat until fully combined and smooth.
  • Gently fold in the Cool Whip and strawberries until the mixture is fully incorporated.
  • Spoon the strawberry mixture into the graham cracker crust and smooth it out with a spatula.
  • Refrigerate the pie for at least 4 hours or until it has set. Add your preferred garnishes and serve.

Notes

Fresh is best: Fresh strawberries and fresh lemon juice offer the best flavors.
Beat until smooth: Keep beating the cream cheese until it's smooth before adding the other ingredients, and then keep beating until that's smooth too.
Let it set: This pie takes at least 4 hours to set in the refrigerator so it's a dessert to plan ahead.
