Strawberry Gin Rickey

This strawberry gin rickey is fruity, crisp and a little herbaceous thanks to the basil. It’s perfect for summer sipping or any time you want something fresh and fizzy. A splash of club soda finishes it off beautifully.

Ingredients

For the Strawberry Basil Syrup

  • ½ Cup granulated sugar
  • ½ Cup water
  • Cup strawberries fresh or thawed, sliced
  • 4 basil leaves

For the Gin Rickeys

  • ½ Cup strawberry basil syrup
  • ½ Cup gin
  • ½ Cup lemon juice
  • ½ to 1 Cup club soda
  • 2 ½ Cups ice

Optional Garnishes

  • mint sprigs
  • basil leaves
  • lemon slices
  • strawberries

Instructions

Make the Syrup

  • In a small saucepan over medium heat combine the sugar, water, sliced strawberries and basil leaves.
  • Bring to a simmer and cook until the strawberries are mushy and the syrup has thickened, around 15 minutes. Remove from heat and let it cool down.

Make the Gin Rickeys

  • In a small pitcher combine the strawberry basil simple syrup, gin and lemon juice. Stir to combine. Add the ice and top with the soda.
  • Serve immediately garnished with mint sprigs, basil leaves, lemon slices, and/or fresh strawberries.

Notes

Let the syrup cool: This keeps the drink cold and prevents dilution.
Use fresh lemon juice: It makes a big difference in flavor.
Adjust sweetness: Add more or less syrup to suit your taste.
Cocktail strength: You can use ½ cup of soda for a stronger drink or a full cup for a more refreshing or less strong cocktail.
