Make the Crust:

  • Preheat the oven to 350°F.
  • Using a stand mixer with the paddle attachment, cream together the sugar and butter.
  • Add the flour and vanilla and keep beating until crumbly.
  • Press the mixture into a parchment paper lined 9 x 13-inch baking dish.
  • Bake for 20 minutes.

Make the Filling:

  • In a food processor, combine the lemon juice, strawberries and sugar.
  • Add the eggs, flour and baking powder. Blend until smooth.
  • Pour the filling into the baked crust.

Bake the Bars:

  • Bake for 35 to 40 minutes.
  • Cool on a wire rack and then cut into bars (12 to 16, depending on desired size)
  • Dust with powdered sugar (if liked) and serve.

Notes

Soften the butter: Use room temperature butter for effortless creaming and a smooth crust texture. Don't use melted butter.
