Strawberry Thumbprint Cookies

These strawberry thumbprint cookies deliver buttery richness and sweet strawberry flavor in every bite. The simple dough and glossy jam centers make them look fancy without any special skill.

  • Preheat your oven to 350°F.
  • Combine the butter and sugars in a large mixing bowl.
  • Use an electric hand mixer to cream the ingredients together on medium-high speed for about 2 minutes, or until the sugar is dissolved.
  • Add the egg and whisk again for about a minute, or until the mixture is light and fluffy.
  • Reduce the speed of your hand mixer and gently whisk in the flour, baking powder, and baking soda.
  • Use a cookie scoop (or just a large spoon) to drop balls of dough onto a cookie sheet.
  • Roll each ball in your hands until smooth and then use the back of a tablespoon to create an indentation in the center of each ball.
  • Fill the indents with strawberry jelly.
  • Bake your cookies for 12 minutes.
  • Once they finish baking, let your cookies cool on the pan for a few minutes and then transfer them to a wire cooling rack to cool completely.

Notes

Roll smoothly: Uniform balls help the cookies bake evenly.
Shape gently: Use a measuring spoon for even indents.
Uniform look: I like to use a glass or biscuit cutter to swirl the edges of our cookies right after they come out of the oven to give them a more uniform appearance.
Avoid overfilling: Too much jam can spill as they bake.
Cool completely: The centers firm up as they rest.
