Strawberry Trail Mix

  • Preheat oven to 300 degrees F. Line a sheet pan with parchment paper.
  • In a mixing bowl, gently toss the almonds, cashews and pumpkins seeds.
  • Pour mixture evenly in sheet pan. Bake for 7 to 10 minutes, tossing mixture halfway.
  • Remove from oven, let cool completely and then place back in the bowl.
  • Add the strawberries and chocolate.
  • Store in a glass jar, silicone bag, or Ziploc bag for easy transport.

Notes

Watch the salt levels: It's up to you whether to use salted or unsalted nuts. If you only have unsalted ones, you can add a little extra salt to the trail mix. Just use your own judgement.
Spice it up: Throw in some hot pepper flakes or cayenne pepper if you want a spicy taste to contrast with the other ingredients.
Portion it out: It's a good idea to keep individual servings in silicone bags or zip-top sandwich bags, as this sweet and salty snack is too easy to eat, and you might eat more than you'd planned.
