Taco Soup in a Jar

This taco soup in a jar is a tasty combination of rice, corn, south of the border seasonings, tomatoes, beef, and beans. It's a delicious soup for lunch or dinner.

  • tortilla strips
  • sour cream
  • shredded Mexican cheese blend

Instructions

  • In a medium pot, brown the ground beef over medium heat until cooked through.
  • Add the ingredients from the jar to the pot. Also add the black beans, tomatoes, and water.
  • Bring to a boil and reduce the heat to a simmer. Cook for 15 minutes.
  • Serve immediately with your preferred toppings and sides.

Notes

Label the jar: Make sure you label the jar with the soup mix ingredients and instructions to make the soup. Otherwise, in a few months, you'll be wondering what is in that jar!
Increase shelf life: Add an oxygen absorber to the jar to extend the shelf life of your soup mix. An oxygen absorber is one of those little packages that say "do not eat" on them, and they work by absorbing oxygen and moisture, helping prevent mold and food spoilage.
Gather your materials: Before you start, make sure you have pint-size wide mouth mason jars, twine and a printable tag on hand.
