Texas Sheet Cake Cookies

Ingredients

For the Cookies:

  • ¾ Cup salted butter 1½ Sticks, at room temperature
  • 1 Box chocolate cake mix 15-Ounce box
  • 2 eggs

For the Frosting:

Instructions

  • Preheat the oven to 350°F.
  • In a large mixing bowl, combine the softened butter and cake mix, using an electric hand mixer to whisk the ingredients together until homogenous.
  • Add the eggs and whisk again until the eggs are incorporated with the rest of the cookie dough.
  • Now cover your cookie dough with plastic wrap and let it chill in the refrigerator for 30 minutes.
  • Use a cookie scoop to drop balls of dough onto a cookie sheet, leaving about 1 ½ inches between each cookie.
  • Bake them for 11 minutes
  • While the cookies are baking, whisk together the powdered sugar, cocoa powder, whole milk, and vanilla until smooth and creamy.
  • Remove the cookies from the oven and transfer them onto a wire cooling rack.
  • Top each cookie with a spoonful of the chocolate frosting and then sprinkle over the chopped pecans.

Notes

Use a hand mixer: Although you don't have to use an electric mixer to make the cake cookies dough, I recommend doing so because it's the best way to achieve a smooth, lump-free dough.
Chill the cookie dough: Don’t skip chilling the cookie dough! Chilling the dough is going to prevent your cookies from spreading too much in the oven.
Prepare for freezing: If you're planning to freeze some, make sure the rich chocolate icing on top is completely set before you do so. This way it will hold its shape.
