Ingredients

  • 3 Cups cooked turkey chopped or shredded, or use leftover chicken or ham
  • 1 Cup turkey gravy or chicken gravy
  • 2 Cups leftover cooked vegetables such as green beans, carrots, corn or peas
  • 3 Cups mashed potatoes
  • ½ Cup cheese shredded, any kind
  • 4 Cups prepared stuffing
  • ¾ Cup cranberry sauce optional

Instructions

  • Preheat the oven to 375°F. Lightly grease a 9 x 13-inch baking dish.
  • Spread the turkey evenly in the baking dish.
  • Spoon the gravy over the turkey, spreading it evenly to keep the turkey moist while baking.
  • Add the leftover vegetables in an even layer.
  • Dollop the mashed potatoes over the vegetables and gently spread them into an even layer.
  • Spoon small amounts of cranberry sauce over the mashed potatoes, distributing it throughout the casserole.
  • Sprinkle the shredded cheddar cheese evenly over the potatoes.
  • Scatter the stuffing evenly over the top of the casserole.
  • Cover loosely with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for another 15 minutes, or until the casserole is heated through and the stuffing is golden and crisp.
  • Let the casserole rest for 5 minutes, then serve with extra gravy or cranberry sauce, if liked.

Notes

Loosen stiff potatoes: You can warm firm mashed potatoes slightly and stir in a little warm milk if needed. This makes them easier to spread in the baking dish without disturbing the vegetables.
Use small spoonfuls of cranberry sauce: Space them across the dish so one portion doesn’t end up with most of the sauce.
Check the center: Golden stuffing on top doesn’t necessarily mean the casserole is hot all the way through. Check the middle with a food thermometer before serving.
