Watermelon Boba Popsicles

Watermelon boba popsicles are a fresh and fun way to cool down. With juicy watermelon, creamy coconut and chewy tapioca pearls, they’re packed with flavor and texture. These popsicles are a great summer treat.

Ingredients

  • 2 Cups water
  • 4 Cups watermelon about ½ a medium watermelon
  • 1 Can coconut cream
  • ½ Cup tapioca pearls
  • Cup brown sugar or to taste
  • 4 Tablespoons honey optional

Instructions

  • In a small pan, bring 2 cups of water to a boil. Add in the tapioca pearls and boil for 5 minutes (or until they float).
  • Turn off the heat and transfer the boba into a bowl of cold water (adjust if needed for your tapioca brand package instructions).
  • Discard almost all of the water and stir the boba with brown sugar.
  • Divide boba into between the popsicle moulds. Divide the honey between the popsicle moulds. Set aside.
  • Combine the watermelon and coconut cream in a blender and blend until smooth. Pour in to the popsicle molds.
  • Place in freezer for about 4 hours until set.
  • Run the popsicle molds under hot water for half a minute, and then gently remove from the mold.

Notes

Choose the right watermelon: When making watermelon boba popsicles, make sure you choose a ripe and sweet watermelon. This will ensure that your popsicles are not only delicious but also have the right amount of natural sweetness, allowing you to reduce the need for added sweeteners like honey and brown sugar.
Prepare your tapioca pearls properly: Before adding your tapioca pearls to the popsicle mixture, it's important to cook them properly. In a small pan, boil 2 cups of water and add the tapioca pearls. Let them boil for about 5 minutes or until they float. Then, turn off the heat and pour them into another bowl of cold water. This will help you achieve the perfect gummy texture for your bubble tea popsicles.
Freeze upright: Use a tray to keep popsicle molds level while they set.
Leave room at the top: The liquid may expand slightly, so don’t overfill.
