  • Whisk the beef broth, drippings, wine, and Worcestershire sauce in a saucepan over a moderately high heat until well mixed.
  • Once the mixture reaches a boil, turn it down and simmer for 5 to 10 minutes or until thick enough.
  • If needed, combine a tablespoon each of cornstarch and cold water and mix this into the au jus. Whisk it in and simmer for a few minutes or until thickened to your liking.
  • Add black pepper to taste.
  • Strain the au just through a fine mesh sieve to remove any bits (optional).
  • Pour it into a gravy boat or serving bowl and garnish with fresh herbs, if liked.
  • Serve hot.

Notes

Keep stirring: Whisk the ingredients together to start the au jus and then stir it frequently while simmering.
Make it thicker: You can either simmer the au jus for longer to thicken it up or stir in a mixture of equal parts cornstarch and cold water and simmer for a minute or two.
Perfect presentation: Beef au jus deserves to be served in a pretty gravy boat.
