Can I make the recipe if I don’t have beef drippings?

Sure. Add an extra half a cup of beef broth along with a couple of tablespoons of butter or another kind of fat. You’ll also need to add seasonings like onion powder, garlic powder, salt, pepper, and some chopped herbs like rosemary, parsley, sage, and/or thyme.

How do I make beef drippings from a piece of beef fat?

Discard any sinew or gristle. Fry the fat gently in a skillet. It will melt in the pan (render). I recommend a splatter guard (this one’s good!) so you don’t end up with grease all over your stovetop. Pour the hot fat into a glass jar or container (not plastic, as it will melt). Chop any solid pieces of fat in the skillet into small pieces and add those to the jar too, or omit them if you want a smooth mixture instead. Let it cool, then cover and refrigerate until required.

  • 1 Tablespoon water, cold

Instructions 

  • Whisk the beef broth, drippings, wine, and Worcestershire sauce in a saucepan over a moderately high heat until well mixed.
  • Once the mixture reaches a boil, turn it down and simmer for 5 to 10 minutes or until thick enough.
  • If needed, combine a tablespoon each of cornstarch and cold water and mix this into the au jus. Whisk it in and simmer for a few minutes or until thickened to your liking.
