Million dollar spaghetti is a seriously comforting baked pasta dinner with a creamy center and lots of melted cheese on top. The cheesy top gently browns in the oven and that might be my favorite part. It’s a simple recipe that appeals to kids as well as grownups and yes, the flavor is worth a million dollars!

Make it ahead: I often assemble the casserole the day before I want to bake it and keep it covered in the refrigerator. This takes most of the work out of dinner the following day, so it’s a great pick if you know you’ll have lots to juggle on the day.
Leftovers keep well: Leftovers are good for days. Individual portions reheat easily in the microwave or oven. I swap the sides when serving leftovers, maybe having a veggie side one day and a salad side another.

Spaghetti: The start ingredient! I try not to cook the spaghetti past al dente because it softens more in the oven. I mix some of the marinara sauce and melted butter with the drained pasta before layering the casserole, to spread the flavors right through.
Beef and sausage sauce: Ground beef and Italian sausage are browned together before the marinara and seasonings are added. I had some sausage to use up and decided to add both instead of just beef and found that using both meats gave the sauce a richer flavor than beef alone.
Creamy cheese layer: Cream cheese, cottage cheese and sour cream are mixed with mozzarella and Parmesan for a super creamy cheese layer. Don’t forget to soften the cream cheese first to make your mixture smoother.
Mozzarella and Parmesan topping: These two cheeses melt over the casserole while it’s baking. I take the aluminum foil off for the final part of the bake, so I can make sure the top browns lightly.

How to Make Million Dollar Spaghetti

Cook the spaghetti: Boil the pasta, drain well and then mix it with melted butter and marinara sauce.
Brown the meat: Cook the ground beef and Italian sausage in a large skillet. Drain excess grease before adding the marinara and seasonings.
Mix the creamy filling: Stir the softened cream cheese with the cottage cheese, sour cream, mozzarella cheese and Parmesan cheese.
Build the casserole: Add half the spaghetti to the baking dish, spread on the creamy filling then add the remaining spaghetti. Finish with the meat sauce and cheese.
Bake the casserole: Bake the million dollar spaghetti casserole time. Let it rest for a few minute before slicing and serving.

Substitutions and Variations

Ricotta cheese swap: My ricotta version produced a smoother, richer filling than the cottage cheese version.
Onion and garlic switch: You can use freshly chopped onion and mince garlic if you prefer those to the powdered seasonings.
Extra garlic variation: Add a little minced garlic to the beef and sausage as they cook if you want more garlic flavor in the meat sauce. I really like garlic, so often add extra!
Homemade marinara sauce: Instead of using a jar, try my easy marinara sauce or this garlic marinara sauce.
Gluten-free version: Replace the regular spaghetti noodles with gluten-free spaghetti and cook it only until al dente. This Barilla gluten-free spaghetti is pretty good! Check the labels on the Italian sausage, marinara sauce and any seasoning blends to make sure they’re gluten-free too.

Serving Suggestions

With vegetables: Garlic green beans are an easy side and cook on the stovetop, so they won’t compete with the spaghetti casserole for oven space. Or you might like to try these air fryer polenta fries or cook some bell pepper, broccoli or zucchini.
With a salad: Lemon Parmesan chopped salad is good with this dish.
With another side dish:

How to Store

Store: Keep leftovers in an airtight container in the refrigerator and eat within 3 days.
Freeze: You can freeze it in an airtight container for up to 3 months.
Thaw:
Defrost it in the refrigerator overnight.
Reheat: You can warm it back up in a pan on the stove or in the microwave.

Top Tips

Cook the spaghetti to al dente: Take the pasta off the heat as soon as it reaches al dente. Softer spaghetti can get too soft during the long bake.
Soften the cream cheese completely: I find room temperature cream cheese much easier to mix smoothly with the cottage cheese and sour cream.
Let it rest: Give the casserole a full ten-minute rest before cutting into it. I find the portions hold together much better if I don’t rush this part.

Yes. Assemble the casserole up to 24 hours in advance, cover it tightly and refrigerate it. Add another 10 to 15 minutes to the baking time if it goes straight from the refrigerator into the oven.

The name refers to the rich, creamy layers that give this baked spaghetti its indulgent reputation. It doesn’t require unusually expensive ingredients.

How do I know when the casserole is done?

The sauce should be bubbling around the edges and the cheese should be completely melted. I like to check the center with an instant-read thermometer and look for a temperature of 165°F.

Million Dollar Spaghetti

This baked spaghetti casserole has a creamy middle and rich meat sauce along with a bubbly cheese topping. It's a great choice for a busy weeknight, perhaps paired with a simple salad.

Ingredients 

  • 16 Ounces spaghetti
  • 6 Tablespoons butter, melted
  • 36 Ounces marinara sauce
  • 1 Pound lean ground beef
  • ½ Pound Italian sausage
  • 8 Ounces cream cheese, softened
  • 1 Cup cottage cheese
  • ½ Cup sour cream
  • 2 Cups mozzarella cheese, shredded
  • ½ Cup Parmesan cheese, grated
  • 2 Teaspoons Italian seasoning
  • 1 Teaspoon garlic powder
  • ½ Teaspoon onion powder
  • ½ Teaspoon salt
  • ¼ Teaspoon black pepper
  • 2 Tablespoons chopped fresh parsley, optional

Instructions 

Preheat the Oven

  • Preheat the oven to 350°F.
  • Grease a 9 x 13-inch baking dish with 4 Tablespoons of the melted butter.

Cook the Spaghetti

  • Bring a large pot of salted water to a boil.
  • Cook the spaghetti following the package directions. Drain well.
  • I recommend that you cook your spaghetti to al dente, because it's going to soften some more while baking later.
  • Return the spaghetti to the pot and toss with the remaining 2 Tablespoons of melted butter and about one-third of the marinara sauce until evenly coated.

Prepare the Meat Layer

  • Meanwhile, cook the ground beef and Italian sausage in a large skillet over medium heat until browned and fully done, breaking the meat into crumbles as it cooks.
  • Don't forget to drain any excess grease to prevent a greasy casserole.
  • Stir the remaining marinara sauce, Italian seasoning, garlic powder, onion powder, salt, and black pepper into the meat.
  • Simmer for 10 minutes.

Prepare the Cheese Layer

  • In a large bowl, combine the cream cheese, cottage cheese, sour cream, ¼ Cup Parmesan cheese and ½ Cup mozzarella until smooth.

Assemble the Casserole

  • Spread half of the spaghetti into the prepared baking dish.
  • Evenly spread the cheese mixture over the spaghetti. Sprinkle ½ Cup mozzarella over the cheese mixture.
  • Top with the remaining spaghetti.
  • Pour the meat sauce evenly over the top.
  • Sprinkle with the remaining 1 Cup mozzarella and ¼ Cup Parmesan.

Bake the Million Dollar Spaghetti

  • Cover loosely with foil and bake for 30 minutes.
  • Remove the foil and continue baking for 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
  • Sprinkle the finished dish with chopped fresh parsley, if liked.
  • Let the casserole rest for 10 minutes before slicing and serving – it will hold together better!
