It starts with a simple butter and flour roux, then warm milk is gradually whisked in until the sauce is smooth and creamy. I use it for everything from lasagna and pasta bakes to vegetables, and you can easily add cheese when you want a richer sauce. It takes about 20 minutes from start to finish, and once you know the basic technique, it’s an easy sauce to make again and again.

Warm the milk: Heat milk gently in a small saucepan over a low heat or in the microwave until warm.
Make the roux: Melt butter in a saucepan, then add the flour and whisk constantly until lightly golden.
Add the milk: Turn it up to a medium heat, then slowly pour in a little hot milk slowly, a bit at a time, while whisking to create a smooth mixture.
Cook until thickened: Stir constantly until the sauce reaches your desired consistency.
Season the sauce: Add salt and pepper. Also add nutmeg if liked.
Add cheese (optional): Stir in shredded cheese using a wooden spoon until melted for a cheesy version.
Serve immediately: Remove from heat and use as desired.

Gluten-free option: Use a 1:1 gluten-free all-purpose flour blend in place of the regular flour. I’ve found a simple flour swap works well for thickening sauces like this, without needing to add anything else.
Use different milk: Swap whole milk for 2% or plant-based milk for a lighter version.
Add cheese: Parmesan, gruyère or mozzarella all work well in place of white cheddar.
Make it herby: Stir in chopped fresh herbs like thyme or parsley for extra flavor, or add a bay leaf.

How to Store

Thaw:
 Defrost it in the refrigerator overnight.

Easy Bechamel Sauce

This smooth white sauce is a classic for a reason. It’s easy to make and transforms everyday dishes with its creamy texture and subtle flavor. Use it as-is or turn it into a cheesy variation.

Ingredients 

  • 4 Tablespoons butter, unsalted
  • 3 ½ Cups whole milk, warmed
  • 4 Tablespoons all-purpose flour
  • 1 Teaspoon salt, or to taste
  • ½ Teaspoon black pepper, or to taste

Optional Ingredients

  • ¾ Cup white cheddar cheese, shredded, for a cheesy version
  • Teaspoon ground nutmeg, or to taste
  • fresh basil, to garnish

Instructions 

  • Warm the milk in a small pan on the stove or in the microwave (warm milk is less likely to make a lumpy roux than cold milk).
  • Melt the butter in a medium saucepan over a low heat.
  • Whisk in the flour for 1 to 2 minutes, or until the roux goes a light sand color. Be careful not to overcook the roux, otherwise it will go too dark.
  • Turn the heat up to medium and add the warmed milk slowly, stirring all the time until the mixture is smooth.
  • Bring it to a boil, then simmer, stirring often, for 10 to 15 minutes or until thickened.
  • Season with salt and pepper, along with nutmeg if using.
  • If you want a cheesy bechamel, stir in shredded white cheddar cheese until it’s melted into the sauce.
  • Take it off the heat and serve over pasta, as a lasagna sauce or however you wish.
