Reheat: Warm it back up in the oven for 20 minutes at 250°F or in a pan on the stove, searing it in a skillet for a couple of minutes to crisp up the outside. You can also enjoy sliced steak cold, perhaps as part of a salad or in sandwiches.

Top Tips

Cook the steak at room temperature: Let the steak sit at room temperature for half an hour before cooking it, for the most tender results.
Perfectly cooked steak: As skirt steak is a lean cut, you might like to cook it to medium rare to keep it juicy.
Let it rest: Once the steak is cooked, let it sit on a plate under tented aluminum foil for 10 minutes before you slice it. This is another way to ensure it comes out juicy.

Italian Steak Recipe FAQs

Do you have to marinate this Italian steak?

Marinating the meat is optional but it helps to tenderize it and flavor it. You can use any steak marinade recipe you prefer. If you’re in a rush, you can marinate it for half an hour or skip the marinade.

What else can you add to the marinade?

Brown sugar, soy sauce, Dijon mustard, orange juice, lime juice, lemon juice, Worcestershire sauce, chilies in adobo sauce and onion powder are all optional marinade ingredients, so add as few or as many as you like.

How long does the steak take to cook?

This depends on the thickness of the meat, the heat of your grill or grill pan, and how you like it cooked. If you want it medium rare, cook it for about 3 minutes per side and use a digital thermometer (I like this one) to check the temperature in the center. It’s medium rare when it’s 130°F in the center. You can cook it more if you want but keep in mind the more you cook it the more you risk it drying out.

We loved this. I made it on the grill instead of in a grill pan. The salsa verde with it was amazing, so don’t forget to add it!
