Italian Steak

This mouthwatering Italian steak simply melts in the mouth. It's marinated to infuse it with flavor and then cooked and paired with Italian salsa verde.

  • Place steak, olive oil, balsamic vinegar, Italian seasoning, garlic powder, salt, and pepper into a large mixing bowl. Using tongs or your hands, evenly coat steak in the marinade.
  • Cover and let marinate in the fridge for at least 30 minutes or up to 4 hours.
  • Preheat a grill pan over medium-high heat. Remove steak from the marinade and add to the hot pan. Sear the steak for 3 to 4 minutes, depending on the thickness of the meat. Flip and cook another 3 to 4 minutes. For medium rare, cook steak until it reaches an internal temperature of 130°F.
  • Transfer steak to a cutting board and loosely cover with foil. Allow to rest for 10 minutes before slicing.
  • Slice steak across the grain and place on a serving platter. Serve with Italian salsa verde if desired.

Notes

Cook the steak at room temperature: Let the steak sit at room temperature for half an hour before cooking it, for the most tender results.
Perfectly cooked steak: As skirt steak is a lean cut, you might like to cook it to medium rare to keep it juicy.
Let it rest: Once the steak is cooked, let it sit on a plate under tented aluminum foil for 10 minutes before you slice it. This is another way to ensure it comes out juicy.
