Beef steak: I like to use sirloin steak. You can also try skirt, flank, bottom round, or another favorite cut. Beef stew meat would work. Keep in mind different cuts can take different amounts of time to become tender, so allow time for that.
Vegetables: Crisp bell peppers and onions add color as well as fresh flavors.
Red pepper flakes: To add a hint of spice. Feel free to omit if you prefer.
Sugar: White or brown sugar adds a touch of sweetness to counter the savory and umami flavors.
Worcestershire sauce: Adds a rich and hearty flavor.

Brown the meat: This is optional (but recommended!) Brown the meat in a skillet, stirring often.
Add the ingredients to a crockpot: Put the meat in your slow cooker with all the ingredients except the red pepper flakes, green onion and cornstarch.
Cook the pepper steak recipe: Cover and cook for 2 hours on high or 4 hours on low.
Thicken the recipe: Make a cornstarch slurry by mixing the cornstarch with a ladleful of liquid out of the crockpot. Add it back in and cook for another 30 minutes or until thickened.
The finishing touches: Sprinkle with red pepper flakes and sliced green onions, and serve immediately with rice, potatoes or your preferred side.

You don’t have to, although a pinch of sugar adds a nice sweetness to contrast with the savory flavors. You can omit it or use artificial sweetener instead if you want.

What color bell peppers are best?

It’s up to you. I like to add green, red and yellow bell peppers to mine because the trio of colors looks so good in the finished dish. But if you prefer orange bell peppers, you only like green bell pepper or you have another preference, use whichever you prefer.

Can you use minced garlic and ginger instead of mincing your own?

Yes you can. Some brands are better than others. I like this one best!

Ingredients 

  • 2 Pounds beef, thinly sliced
  • 1 onion, larg, halved then cut into thin rounds
  • 1 green bell pepper, cut into ½ inch strips
  • 1 red bell pepper, cut into ½ inch strips
  • 1 yellow bell pepper, cut into ½ inch strips
  • ½ Cup beef broth
  • 2 Tablespoons soy sauce
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons garlic, minced
  • Tablespoons granulated sugar
  • 1 Tablespoon ginger, minced
  • 1 Teaspoon onion powder
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 4 Tablespoons cornstarch
  • ¼ Teaspoon red pepper flakes
  • green onion, sliced, optional

Instructions 

  • Put the beef in a Crockpot with the onion and peppers.
  • Add the broth, soy sauce, Worcestershire sauce, garlic, sugar, ginger, onion powder, salt and pepper.
  • Put the lid on the slow cooker and cook on high for 2 hours or low for 4 hours.
  • Ladle some broth from the meat and whisk in the cornstarch, then pour it over the meat.
  • Continue cooking for 30 minutes or until the sauce has thickened.
  • Sprinkle with pepper flakes and green onion.
  • Serve immediately with your preferred sides.
