Really easy to make: Pretty much all you have to do is add the ingredients to your slow cooker and switch it on!
Plenty of amazing flavors: Along with the meaty flavor of the steak, you get fresh vegetable flavors, garlic, soy sauce, ginger, onions, and more. This is absolutely not a bland dish.

Crockpot Beef Pepper Steak Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Beef steak: I like to use sirloin steak. You can also try skirt, flank, bottom round, or another favorite cut. Beef stew meat would work. Keep in mind different cuts can take different amounts of time to become tender, so allow time for that.
Vegetables: Crisp bell peppers and onions add color as well as fresh flavors.
Red pepper flakes: To add a hint of spice. Feel free to omit if you prefer.
Sugar: White or brown sugar adds a touch of sweetness to counter the savory and umami flavors.
Worcestershire sauce: Adds a rich and hearty flavor.
Minced ginger: Adds another dimension to the aromatic flavor profile.

Brown the meat: This is optional (but recommended!) Brown the meat in a skillet, stirring often.
Add the ingredients to a crockpot: Put the meat in your slow cooker with all the ingredients except the red pepper flakes, green onion and cornstarch.
Cook the pepper steak recipe: Cover and cook for 2 hours on high or 4 hours on low.
Thicken the recipe: Make a cornstarch slurry by mixing the cornstarch with a ladleful of liquid out of the crockpot. Add it back in and cook for another 30 minutes or until thickened.
The finishing touches: Sprinkle with red pepper flakes and sliced green onions, and serve immediately with rice, potatoes or your preferred side.
Substitutions and Variations
Gluten-free option: If you want a gluten-free version, ensure your soy sauce is gluten-free (some brands contain flour) and use arrowroot or a gluten-free cornstarch alternative.
Different cut of beef: Your beef strips can be sirloin, skirt steak, round steak, or your favorite cut. Just adapt the cooking time accordingly.
Spice it up: Add a splash of hot sauce or some chili powder if you want a hotter flavor.
Other vegetables: Not a bell pepper fan? Try zucchini or mushrooms in their place.
Serving Suggestions
Appetizers: Start the meal with baked feta soup.
Side dishes: Consider jalapeno creamed corn or one of these air fryer side dishes.
Drinks and desserts: This country fair lemonade is great to sip and you could also make banana bread crumb cake to finish.
How to Store This Easy Pepper Steak Recipe
Store: Keep leftover pepper steak in an airtight container in the refrigerator for up to 4 days.
Freeze: This recipe can be frozen for up to 3 months.
Thaw: Thaw overnight in the refrigerator.
Reheat: Warm it back up in a pan on the stove or in the microwave.
Top Tips
Brown the meat first: Although not compulsory, it’s a good idea to brown the meat before adding it to the slow cooker, to give it a nice crust and help seal in all those wonderful juices.
Prep your side in time: Whether you want to serve pepper steak with mashed potatoes, egg noodles, white or brown rice, start making your side when the pepper steak is nearing the end of its cooking time.
Choose fresh vegetables: I wouldn’t recommend using frozen vegetables because of their inferior texture. Perfectly fresh sweet bell peppers are a joy in this slow cooker pepper steak recipe.
Crockpot Pepper Steak Recipe FAQs
You don’t have to, although a pinch of sugar adds a nice sweetness to contrast with the savory flavors. You can omit it or use artificial sweetener instead if you want.
It’s up to you. I like to add green, red and yellow bell peppers to mine because the trio of colors looks so good in the finished dish. But if you prefer orange bell peppers, you only like green bell pepper or you have another preference, use whichever you prefer.
Yes you can. Some brands are better than others. I like this one best!
