Beef Yaki Udon Noodles

Beef yaki udon is a tasty noodle stir fry which you can make in less than 30 minutes. Try this easy udon recipe if you're looking for a simple Japanese dish to make with beef and noodles. You can make the entire thing in one wok for an easy dinner.

Ingredients

  • 14 Ounces udon noodles
  • 2 sirloin steaks
  • 8 Ounces baby bok choy sliced
  • ½ Cup shiitake mushrooms sliced
  • 2 carrots sliced
  • 5 scallions cut into 2-inch strips
  • 1 Teaspoon baking soda

For the Sauce

Instructions

  • Make the sauce. Combine all ingredients in a bowl and whisk well.
  • Thinly slice the steak. Add to a bowl and toss with salt, pepper, baking soda, and 1 Tablespoon of the sauce.
  • Blanch the noodles. Add udon to hot water for 2 minutes. Drain and rinse. Set aside.
  • Heat a tablespoon of oil in a wok. Add the veggies and stir fry for 5 minutes.
  • Push the veggies up the sides of the wok and add the steak in the middle. Stir fry for 2 minutes.
  • Add the udon and sauce to the wok and toss to coat. Cook for 5 minutes.
  • Garnish with red pickled ginger (optional).

Notes

Slice steak against the grain: This keeps it tender and easy to chew.
Don’t skip the noodle rinse: Rinsing removes excess starch and helps noodles stay springy. If you skip the rinse, the starchy film will make them gummy and they will stick together.
Prep all ingredients first: Stir fry moves quickly, so have everything ready to go.
Toss gently when adding noodles: Prevents breakage and helps everything coat evenly.
