Biscuits and Gravy Breakfast Casserole

Ingredients

  • 1 Roll buttermilk biscuits 8 Count
  • 2 Pounds ground sausage
  • 6 eggs large
  • Cups cheddar cheese shredded
  • ½ Cup all purpose flour
  • 1 Teaspoon salt
  • 2 Cups whole milk
  • butter or nonstick cooking spray for greasing

Instructions

  • Preheat your oven to 350°F and grease a 9 x 13-inch baking pan and with butter or nonstick cooking spray.
  • Use a sharp knife or some kitchen shears to cut your biscuits into small pieces and arrange them on the bottom of your baking pan. Set aside.
  • Cook the ground sausage in a skillet over a medium-high heat for about 4 minutes, or until cooked all the way through.
  • Scatter the sausage over the top of the biscuit pieces, leaving the grease in the pan.
  • Beat the eggs and pour over the casserole.
  • Whisk the flour and salt into the sausage grease in the pan until homogenous and then add a few tablespoons of milk.
  • Whisk the mixture over a medium heat until smooth and then add the remaining milk. Whisk frequently until the gravy reaches your desired thickness.
  • Spread the cheese over the sausage and then top the dish with the homemade gravy.
  • Bake for 40 minutes and then let it cool on the counter for 10 to 15 minutes before slicing and serving.

Notes

Grease the baking pan: Don't forget to grease the pan, otherwise the casserole will stick.
Thickening the gravy: Keep an eye on the gravy as it thickens. It can thicken quickly and you don't want it to get lumpy or scorched.
Let it cool: Give the biscuits and gravy breakfast casserole 10 or 15 minutes to cool before slicing and serving. It will still be hot but some of the moisture content will have settled, making slicing easier.
