Ingredients

  • 1 Box brownie mix 28 Ounce box
  • 8 Ounces cream cheese softened
  • 2 Teaspoons vanilla extract
  • 1 Teaspoon instant espresso powder optional
  • 8 Ounces Cool Whip thawed or 1 1/2 cups whipped cream
  • Cup mini chocolate chips
  • colorful sprinkles to decorate

To Serve:

  • dippers such as strawberries, vanilla wafers, cookies, and pretzels

Instructions

  • First, heat treat the brownie mix: In a large microwave safe mixing bowl add the brownie mix and microwave for 2 minutes, stopping at 30 second intervals to mix thoroughly.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese with the vanilla extract and espresso powder until smooth and creamy, about 3 minutes. Scrape the bowl with a rubber spatula occasionally.
  • Add in the whipped topping and mix until just combined, scraping the bowl once to make sure it is all evenly combined.
  • Add in the brownie mix, and mix on low speed until well blended, 1 or 2 minutes.
  • Fold in the chocolate chips and remove to a serving container. Chill for 2 hours.
  • When ready to serve scatter over the sprinkles and serve dip with strawberries, vanilla wafers, cookies and pretzels for dipping.

Notes

Not a coffee fan? Although espresso does intensify the chocolate flavor in this brownie batter dip, you can use something else, perhaps adding cinnamon and chili powder, orange zest or toasted pecans instead.
Don't finish the dip until serving: It's best not to add the sprinkles or whatever other finishing touches you're using until just before serving, for the freshest result.
Experiment with add-ins: There are plenty of other ingredients you can add to your brownie batter dip, such as peanut butter chips, white chocolate chips, mini marshmallows, or butterscotch chips for added decadence.
