Ripe bananas are sweeter: The riper your bananas are, the more flavor they will have, so try to use bananas with plenty of brown spots. If you would use the bananas for banana bread, they would be great for this recipe.
Melting the chocolate: You can use a double boiler (or a glass bowl over a pan of simmering water) instead of the microwave to make your melted chocolate if you prefer.
Ensure the banana bites are hard: If your banana bites start to get soft as you dip them in the chocolate, put them back in the freezer for about 10 minutes to harden. If they are too soft when you dip them, you'll have a gooey mess.
