Chocolate Peanut Butter Banana Bites

These delicious chocolate peanut butter banana bites combine nutty, creamy and sweet flavors, all enclosed in a chocolate coating. They're energizing, tasty and kind of addictive!

  • Add the mashed bananas, vanilla, Greek yogurt, and peanut butter to a large bowl. Stir to combine.
  • Drop spoonfuls of the peanut butter banana mixture onto a large baking sheet lined with parchment or wax paper.
  • Let the banana bites chill in the freezer for 45 minutes, or until hard.
  • Melt your chocolate chips in the microwave. Start with 45 seconds and then stir the chocolate.
  • Continue heating the chocolate for 30 seconds at a time until it's completely melted.
  • Dip each banana bite in the chocolate and then return them to the baking sheet.
  • Let the bites chill in the freezer for another 15 minutes before serving.

Notes

Ripe bananas are sweeter: The riper your bananas are, the more flavor they will have, so try to use bananas with plenty of brown spots. If you would use the bananas for banana bread, they would be great for this recipe.
Melting the chocolate: You can use a double boiler (or a glass bowl over a pan of simmering water) instead of the microwave to make your melted chocolate if you prefer.
Ensure the banana bites are hard: If your banana bites start to get soft as you dip them in the chocolate, put them back in the freezer for about 10 minutes to harden. If they are too soft when you dip them, you'll have a gooey mess.
