Chocolate Peanut Butter Banana Bites
These frozen chocolate peanut butter banana bites have a creamy banana, Greek yogurt and crunchy peanut butter filling covered in semisweet chocolate.

Add the mashed bananas, vanilla, Greek yogurt, and peanut butter to a large bowl. Stir to combine.
Drop spoonfuls of the peanut butter banana mixture onto a large baking sheet lined with parchment or wax paper.
Freeze the banana bites for 45 minutes, or until firm enough to dip in chocolate without losing their shape.
Microwave the chocolate chips for 45 seconds, then stir well.
Continue microwaving in 20 to 30-second intervals, stirring well after each one, until the chocolate is smooth and completely melted.
Dip each frozen banana bite in the melted chocolate, let the excess drip off, and return it to the lined baking sheet.
Let the bites chill in the freezer for another 15 minutes before serving.
Use really ripe bananas: This is a great recipe for bananas that are already covered in brown spots. They're sweeter, mash more smoothly and give the filling much more banana flavor. If you would use the bananas for banana bread, they would be great for this recipe.
Don't rush the first freeze: The bites need to be firm before you dip them. If they're still soft, dipping them in warm chocolate gets messy very quickly.
Work in batches: I like to leave some of the bites in the freezer while I dip the others so they stay nice and firm. If any start getting too soft, pop them back in the freezer for 10 minutes.
Keep the chocolate smooth: Melt the chocolate slowly and stir well between each burst in the microwave. If it starts getting too thick while you're dipping, warm it again briefly.
