Classic French Toast

Ingredients

  • 8 Slices brioche day-old, ½-inch thick or white bread
  • 4 eggs
  • ½ Cup milk dairy or plant-based
  • ½ Cup heavy cream or Half & Half
  • ½ Teaspoon ground cinnamon
  • 1 Tablespoon granulated white sugar
  • 4 Tablespoons butter for frying

  • Ready a warm oven to keep cooked French toast in until ready to serve.
  • In a large mixing bowl add the eggs, milk, cream, cinnamon, and sugar. Whisk thoroughly until completely combined.
  • Heat a tablespoon of butter in a heavy nonstick skillet set over a medium heat. When the butter is bubbling, it’s ready to use.
  • Meanwhile, soak two slices of brioche in the egg custard until they are completely saturated on both sides.
  • Add the bread to the skillet and cook for 2 minutes, then flip over and cook for two minutes on the other side. The bread should be a golden brown color. If not cook it, for longer.
  • Remove the cooked French toast to the oven so it stays warm while you cook the rest.
  • Repeat the above steps until all the French toast is made.
  • Serve warm, topped with seasonal fruit, drizzle over maple syrup and sprinkle over some powdered sugar.

Notes

No stale bread? If you can’t wait for your bread to go stale and need French toast right now, speed up the process by drying your sliced fresh bread in a 200ºF oven for about 10 minutes.
Soak the bread: Let it sit in the egg mixture to really soak up the liquid. It should be thoroughly saturated.
Keep it warm: As you're making this in batches, keep the cooked French toast slices on a baking sheet in a warm oven while you make the rest.
Dress it up: French toast is wonderful with butter, maple syrup, powdered sugar or all three combined! Adding a selection of seasonal fresh fruits is also a nice touch.
