White sugar: I add a touch of granulated sugar to the egg-rich custard to sweeten it slightly. You can substitute this with a teaspoon of vanilla extract if you prefer.
Milk and cream: A combination of milk and heavy cream works very well. You can however use all cow’s milk or plant milk or a mixture of Half & Half if you prefer. Just make it up to one cup.

Store: French toast is best served and eaten as soon as it’s cooked. However, any leftovers will keep in an airtight container in the refrigerator for a day or so.
Freeze: I wouldn’t recommend that you freeze French toast.
Reheat: Warm leftover French toast back up in a skillet on the stove or in the oven.

It’s incredibly quick and simple to make at home and lends itself to many variations and topping options. Stale bread really is the best choice here since it drinks up the egg custard better resulting in French toast that is golden and crisp on the outside but fluffy in its center.

What’s the best bread for French toast?

Use stale or day old brioche or white bread that you can buy as a loaf and cut into generous slices yourself. You could even use a baguette if you have one hanging around – pretty much anything goes as long as it’s white bread. Brioche bread tends to be the most favorable in terms of presentation, taste and texture.

Classic French Toast

Ingredients 

  • 8 Slices brioche, day-old, ½-inch thick or white bread
  • 4 eggs
  • ½ Cup milk, dairy or plant-based
  • ½ Cup heavy cream, or Half & Half
  • ½ Teaspoon ground cinnamon
  • 1 Tablespoon granulated white sugar
  • 4 Tablespoons butter, for frying

To Serve:

Instructions 

  • Ready a warm oven to keep cooked French toast in until ready to serve.
  • In a large mixing bowl add the eggs, milk, cream, cinnamon, and sugar. Whisk thoroughly until completely combined.
  • Heat a tablespoon of butter in a heavy nonstick skillet set over a medium heat. When the butter is bubbling, it’s ready to use.
  • Meanwhile, soak two slices of brioche in the egg custard until they are completely saturated on both sides.
  • Add the bread to the skillet and cook for 2 minutes, then flip over and cook for two minutes on the other side. The bread should be a golden brown color. If not cook it, for longer.
  • Remove the cooked French toast to the oven so it stays warm while you cook the rest.
  • Repeat the above steps until all the French toast is made.
  • Serve warm, topped with seasonal fruit, drizzle over maple syrup and sprinkle over some powdered sugar.
